FCV-1100 connecting a R299 transducer- OK?

I was looking for a separate sounder for deep dropping for swordfish. I had an FCV-1100 already on a shelf and I got a great deal on a R299.
I have it all installed and have questions on the wiring.
See pics.
I intend to wire:
low positive to #2 XDR+ (Blue/ White)
low negative to #4 XDR- (Black/ White)
High positive to #2 XDR+ (Blue)
High negative to #4 XDR- (Black)
Outer shield to #3 on Low and High?

I don't see where I program for 3kW in the FCV menu?

as you said, but each pack of LF and HF wires will normally have their own shield with the colored wires. Each transducer shield would normally go into the respective #3. If you have a newer transducer where Airmar changed the wire stock and don't have individual shields along with the transducer pairs, then yes I would split off the overall cable shield into both #3s.
