Can we fix the engine data screen overlap to work like the radar data screen and not overlap?

You can't shift the engine data over when the NavData box is on screen. You can however, change the transparency of the NavData boxes. Tap Home=>Settings=>Chart Plotter then adjust the NavData transparency slider. The higher the number, the more transparent it becomes.
