Who makes the best J1939 - NMEA2K device? Anyone make a dual engine device or will I need one for each engine?

You might try asking who makes the best J1939 converters on a boater's forum. As a manufacturer we try not to pick sides for anything other than our products.

Typically you will need one per engine and configure them on different instance numbers so they don't conflict with each other on the NMEA 2000 bus.
