I was updating the navpilot to the latest version and it got stuck on the update loading screen, I turn it off and on and it remains the same, someone knows how to fix it or how to do a herd reset

What update process were you using? (via a TZT type unit, via USB, via PC)
The Navpilot 300 is pretty new. Why did it require updating?

I update it because sometimes it does not link the processor with the controller and I saw that there is a new update. I did it with usb with pendrive by the processor

Is isn't good that an update is stopped in the middle of the process. I suspect a bad NMEA 2000 network if not talking well and also failed during the software update. I would recommend removing everything off the NMEA 2000 network except the Pilot and the pilot control head and try the programing again. It is important that your NMEA 2000 be a valid bus with proper power and two (no more no less) terminations. If the unit still has problems during the programming, I recommend sending it into the service center for evaluation.

I just had this happen too and both of my control units are essentially unusable stuck at "NOW UPDATING" in part two (USB stick #2) of the upgrade process. They have been sitting here for over an hour, and the timer is not increasing. My NMEA 2000 network is very small and everything else is powered off.

I was upgrading because one of the control units had older software than the other (a newer unit). I've already sent a note into support, but is there a way to reset the control units to try things over again?
