I have gotten a heading sensor I believe is a pg500, will this help with my screen updating position faster and will it keep the bow of the boat on the display facing the correct direction even if backing up. Right now if I start backing up the boat icon flips the opisite way.

Heading on the Vx2 can be displayed in a data box and it will allow features like radar overlay (if you have a radar) BUT it will not change how the boat pointing is done so it won't change anything in that respect. The Vx2 only uses COG from your GPS to point the boat. The boat must be moving at 3knts or better for COG to be valid.

Ok so the heading sensor is only going to be needed if I want to use radar overlay on top the chart? What cables are needed to hook this unit up?

It is needed for other reasons too, like if you have an ARPA board which requires AD10 heading. The PG500 comes with the required cable to connect it to the Vx2. It normally comes with a 7 pin power/data cable (000-159-686) and the 6 pin NMEA heading cable (000-159-695). It is 000-159-695 that normally goes from the center NMEA connection on the PG500 to the dedicated heading port of the Vx2 (data 3 of the 10.4" or data 2 of the 7").
