I want to use my satellite compass for gps to a gp39 on the nmea 2000 network . Can I connect a converted to the gp39 and change mode to scx21 to do this?

When the GP39 is connected to the SCX20 it is done by direct wiring. It is not possible to have the NMEA 0183 SCX21 talk to the GP39 by NMEA 2000. The primary reason is the SCX21 is a NMEA 0183 device and has no NMEA 2000 port.

I have a nmea2000 sitex sat compass to the nmea 2000 network that feeds my tzt2 and autopilot, then I have a nmea2000 to NMEA 0183 converter and wired that to the gp39 and updated it with new firmware and changed to the scx21 mode hoping to receive gps data but did not work.I can connect the gps sensor that came with the gp39 but was hoping not to,I want the gp39 to display the highway to a point so when my tzt2 shuts down I still have the track to follow

Yeah, the SCX21 MODE is only for when a SCX21 is physically connected to the GP39. As you found, you can't do that.
