How does a 6232 dodge controller work with a 711 AP? What I mean is: when in NAV (or Auto) mode, what do the buttons on the 6232 do when pressed? When held?

I haven't seen any doc to know how this controller works from a user-prespective.

The 6232 remote (FUSA p/n FAP6232) is a non-follow-up remote. It allows for a temporary port/starboard deviation from the course that it is following when in NAV mode. Once the button is released, the pilot will bring the vessel back to its programmed course. If the pilot is in AUTO, it will change the set course degrees to your new designated course. We typically call it a dodge controller because it acts exactly like the dodge buttons do on the main control head.
