Tuning a DFF-UHD and B-275 for deep drop in 1500'.

Would like some advice on the best approach to tuning to mark deep bait in 1500-1800' of depth.

I currently have gain at 30% and clutter at 10% and see the thermocline at ~150-200' and solid bait in 3-400' but not much else. I get solid bottom readings at 2500'.

The next step is to get better at seeing what is down there.

Don't be afraid of using more gain. Most users tend to try to do everything just with the gain control. Next time out try this, use as much gain as needed to see deep water targets. In deeper water the bottom return is 100 times stronger than fish returns, just because you can see the bottom doesn't mean you are going to see fish. Normally there more life in the upper part of the water column so when you increase the gain expect the top section to turn red (see the below screen shots). Lowering the TVG control will help suppress this but a better way is to shift the picture. Also since Chirp targets are so defined it also make them easier to see. Instead of having the scale set from 0-1500ft range using it from 750-1500ft immediately doubles the size of all targets.
