I'm often looking to snap a photo of a recent install or something interesting without dealing with the screenshot features of the displays...

Is there any way to stop the rolling flicker so it photographs well? Must have a different back lighting system than computer displays. (fwiw, garmin seems to also not photograph well.)

You can do a two finger tap on the screen to get a screenshot if you have a USB drive plugged into the unit. Otherwise "refresh rate bars" is a common problem with taking photos of any monitor, including TVs and PC monitors.
 
If you can change the shutter speed of the camera you can sometimes avoid getting raster scan showing on photos. Magnetron is correct, you will get the best photos using screen shots in regards to what the unit is showing. If you can't adjust your camera and want install/console photos, I would take photos with the units turned off.
