I would like to know if I can connect a heading sensor that trasmits HDT (NMEA protocol) at 4800bps baud rate directly to the port J605 at Processor Unit. The manual says the baud rate must be 38400 bps. Cannot the software automacaly recognize the baud rate? Thanks

That port is fixed to the IEC-61162-2 standard. (38400 bps)
IMO, establishes certain requirements to meet the IMO standard. This is one of them.

So, I understand the radar will not ready the information due to these diferent baud rates at that port.
Can I use another port to do that?
I am already receiving AIS and GPS by other ports.
I would like to receive a digital gyrocompass signal, but the output baud rate is 4800.

If the unit is taken out of IMO mode (making it not suitable for IMO vessels) it will accept 4800 baud HDT on that port.

Johnny Electron, when the radar was purchased, it was configured on IMO mode. Can I change it? How can I do that?

Instructions to take it out of IMO mode can be found in the installation manual. It will be in an installation setting under type.
